Like every successful business, the good ones figure out the logistics of large events and shine through, thus making money and putting the competition out of business.

If only 'successful' meant 'the best food', and didn't come down mostly to marketing.

Especially "marketing" that makes your competition unable to sell their wares. Which is why I started this thread :-)
